This machine can achieve the production of a great variety of cookie products with its depositing, wire-cutting and encrusting features. With three sets of hoppers, the equipment could be used for different types and different colors of dough at the same time, ranging from semi-liquid dough to stiff wire-cut dough, including dough that contains particles.
The multifunctional cookie machine is to be positioned in the forming section of a production line, in the upstream of the baking oven. It is composed of up to three feeding hoppers, moulding plate, metering pump, servo-driven wire cutter and could be equipped with supplementary devices for decoration such as salt/sugar sprinkler and jam depositor.
The main features of the machine include high speed depositing and wire cutting of the dough masses, precise weight control and thickness control of each dough piece, less down-time due to full recipe control and easy cleaning with clean in place device (C.I.P) .
The wire-cutting function of the equipment can produce cookies with one to three different colors. Its application of high speed movement and vibration allow it to cut the dough that contains particles such as nut and chocolate chips, ensure no dough remain on the cutting wire even if it has high viscosity.
The depositing function also allows the production of cookies in three different colors by putting three different dough masses into three separate feeding hoppers. The colors will be evenly distributed on the surface of the cookie by the control of metering pump.
This function is specially designed for cookies with fillings. In the three feeding hoppers of the cookie machine, the center hopper will be used for the filling, and the hoppers on the two sides are mainly used for the encrusted layer. Therefore, there will be up to two colors on the surface of the encrusted cookies.
The cookie machine can be equipped with decorating devices such as egg washing machine, sprinkler, jam depositor, which can enrich the categories of the product.
